TOMMY’S MARGARITA 

If you haven’t been introduced, the Tommy’s Marg is the Margarita’s cool younger brother. The perfect combination of sweet, tart, and refreshing. You’ll be falling head over heels for them. Tommy’s swaps out the orange liqueur in the traditional Marg, for agave syrup, in homage to the plant from which tequila is made. This highlights the honey notes in the Jose Cuervo Tradicional Reposado tequila – for those who really appreciate their booze. However, the lime juice balances the sweet heady flavours of the tequila, retaining the light zingy finish we love about the Margarita. 

The name originates from the eponymous San Francisco restaurant, where a bartender named Julio Bermejo created it in the 90s. Julio’s bar offers over 100 variations on the humble margarita, made with the largest collection of 100% agave tequilas outside of Mexico. Tommy’s restaurant had asserted itself as a mecca for tequila lovers everywhere. With this recipe, Proximo can help you bring brilliant bartending into your own home.  

To make one cocktail, you will need:  

  • 50ml Jose Cuervo Tradicional Reposado 
  • 30ml lime juice 
  • 15ml organic agave syrup 
  • Salt for rim 
  • 1 Lime wedge for garnish 

Then, simply: 

  • Run a lime around the rim of a glass and dip in salt. 
  • Add the Tradicional Reposado, lime Juice and agave syrup together into a cocktail shake and shake with ice. 
  • Pour into your glass, straining the ice. 
  • Garnish with a lime wedge. 

 

 

Beach Life Paloma cocktail

BEACH LIFE PALOMA 

Fizzy, fruity, frivolous, the beach life paloma is fun’s best friend. Enjoyed on a warm sunny beach, as its name suggests, or at a classy soirée. This paloma is ready for anything. A playful turn on Mexico’s most popular drink, the beach life adds more bubbles for a light and fruity delight. This works best with the Jose Cuervo Tradicional Plata tequila, or a similar silver tequila. You don’t want a tequila with too strong a taste, as this will overwhelm the delicate, bitter taste of the grapefruit.  

To make one cocktail, you will need: 

  • 60ml Jose Cuervo Tradicional Plata 
  • 120ml tonic 
  • 30ml grapefruit juice 
  • 1 Grapefruit wedge for garnish 

 Then, simply:  

  •  Add ice to a high-ball glass and pour in your ingredients. 
  •  Stir gently and garnish with a grapefruit wedge.

ANEJO OLD FASHIONED  

The tequila Old Fashioned is a unique way to enjoy a timeless classic. Originally referred to as the ‘whiskey cocktail’, and containing only whisky, sugar, bitters, and water. The Old-Fashioned dates back to around the 1800s. Only the aged and oaky notes of the Añejo could do it justice. The bold, woody 100% agave tequila and the vibrant and citrus flavours of the bitters and orange are what makes this such an obvious choice. Try out this recipe from Proximo for a fresh perspective on one of our personal faves. 

To make one cocktail, you will need: 

  • 60ml Jose Cuervo Tradicional Reposado 
  • 7ml simple syrup 
  • 2 dashes bitters 
  • Blood orange twist for garnish 
  • Cinnamon stick (optional) 

Then, simply:  

  •  Add bitters, simple syrup, and your tequila to a rocks glass with ice (we recommend bigger cubes). 
  •  Stir for about 30 seconds until the ice has started to melt slightly. 
  •  Garnish with orange peel, making sure to squeeze the peel over the glass, and maybe even rub orange around the rim. Add a cinnamon stick if you fancy it.

TEQUILA MAI TAI  

The road less taken is all the more beautiful and enticing. Nothing confirms this like the Tequila Mai Tai. Enough to quench the thirst of any weary traveller. The Tequila Mai Tai is the happy resting place on a cocktail journey across countries, cultures, and decades. The Tahitian who, tasting the first Mai Tai, exclaimed “Mai Tai-Roa Aé” (meaning ‘Out of this world-the best’), may have a new favourite drink. 

The Tequila Mai Tai gets playful with the tropical flavours of sweetness and citrus. The reposado tequila enhances and brightens up the taste palette. This drink is a winner at any event.  

To make one cocktail, you will need: 

  • 50ml Jose Cuervo Traditional Reposado 
  • 15ml sugar syrup 
  • 20ml lime juice 
  • 10ml orgeat syrup 
  • 3 – 4 dashes of Angostura aromatic bitters 
  • Spearmint sprig 
  • 2 – 3 dashes of Angostura aromatic bitters 
  • Lime wedge 
  • Orange salt

Then, simply: 

  •  Run a lime wedge around the rim of a rocks glass and dip in orange salt (if using). 
  •  Fill glass with ice and set aside. 
  •  Add remaining ingredients to a shaker with ice. 
  •  Shake and strain into the prepared glass. 
  •  Serve with chosen garnishes.

BLOODY MARIA 

There’s no cure for a hangover like the hair of the dog. And even on the goriest morning after, the Bloody Maria will have you panting for another. The Bloody Maria packs the same punch as the Bloody Mary, with a bold and mature touch of silver tequila, instead of the harshness of vodka. The Bloody Mary is polarising, but we think you’ll love our Bloody Maria recipe.  

The silver tequila softens the richness of the tomato, altering the flavour. Paired with lime juice, a natural complement to the taste of tequila, the prickly additions of salt, pepper, and Worcestershire sauce make for an unforgettable drink.   • 60ml Maestro Dobel Silver 
  • 10ml lime juice 
  • 120ml tomato juice 
  • Worcestershire sauce 
  • Salt and pepper 
  • Spearmint Sprig 
  • Mini tomatoes 
  • Cucumber 
  • Celery stick 

Then, simply: 

  •  Add all ingredients plus ice to a shaker. 
  •  Shake well, then serve over ice in a rocks glass. 
  •  Garnish with a spearmint sprig, mini tomatoes, cucumber, or a celery stick.
